Berry Chia Pudding – Small Jar Batch

Ingredients

  • 1½ cups fresh or frozen raspberries
  • 2 cups milk of your choice
  • ½ cup chia seeds
  • ½ cup Greek yoghurt
  • 1–2 tbsp sweetener of choice, to taste
  • 1 tsp vanilla extract

For serving

  • Greek yoghurt
  • Fresh raspberries
  • Blueberries, if desired

Method

  1. Blend the raspberries until smooth. If using frozen raspberries, allow them to thaw first.
  2. Mix the raspberry purée with the milk, Greek yoghurt, vanilla and sweetener.
  3. Stir in the chia seeds, making sure they’re evenly distributed.
  4. Leave for about 10 minutes, then stir again. This prevents the chia seeds from settling at the bottom.
  5. Pour your chia pudding into small jars or ramekins and place them in the fridge for 3–4 hours, or better still, overnight. This allows time for the pudding to set. This, allows time for the pudding to set.
  6. Then your pudding is ready to serve! Add fresh raspberries and blueberries, or whipped cream, just before serving.

The pudding is so easy to make, and it’s delicious too, especially when you fancy a healthy sweet treat. Why not try making different versions? A little cocoa powder with the raspberries makes this a wonderful chocolate & fruit pudding. Cover your pudding and keep it refrigerated. For best quality, enjoy within a few days. 🍓💗
