A deliciously chocolatey and fruity chia pudding that’s quick to prepare, packed with fibre and protein, and perfect to make ahead when you’re busy.

Ingredients
- 1 litre (4 cups) almond milk — or your milk of choice
- 8 tablespoons cacao powder — cocoa powder can also be used
- 500 g frozen raspberries
- 1½ cups chia seeds
- 4 teaspoons vanilla extract
- 1 teaspoon low-calorie sweetener
Method
- Add the ingredients
Place the almond milk, cacao powder, frozen raspberries, chia seeds, vanilla extract and sweetener into a blender or large mixing bowl. - Blend or mix
Blend until well combined and smooth, or mix thoroughly by hand if you prefer a little more texture. - Portion into jars
Divide the mixture between small glass jars or containers and cover.
Chill
Place in the refrigerator for a few hours, or until the chia seeds have absorbed the liquid and the pudding has set.
Enjoy!
Once set, give it a quick stir and enjoy chilled.
A Little Tip About Sweetness
This pudding has a naturally tart, fruity flavour from the raspberries. If you prefer a sweeter pudding, simply add a little honey or increase the amount of sweetener to suit your taste.
I used cacao powder, but cocoa powder can also be used. Cacao is generally considered less processed than conventional cocoa powder, although the nutritional differences can vary depending on the product.
